Kala Topper…
1 cup Feta-crumbled
1/2 cup julienned spinach (cut in thin strips)
2 Tbsp. diced red pepper (roasted or not)
15-20 Kalamata Olives
2 tsp. olive oil
1 Tbsp. fresh lemon juice
1 clove roasted garlic-smashed (I like it roasted so it’s not as strong)
1/4 tsp. oregano
pepper to taste and salt if you like
Mix the feta, spinach, pepper and olives in a bowl. In a small bowl, mix the oil, lemon juice, garlic, and oregano to blend thoroughly. Pour over the feta mixture and season to taste.
Serve with mini peppers, toasted bread, cucumbers and so on. Leftovers? Toss into a salad.
